Dominik Połeć of Browar Green Head in Działdowo, Poland talks with Beer Idiot Dieter Proost about going from award winning homebrewer to commercial brewery.
Połeć focuses on what he calls “heavy IPAs”, sours and stouts. The brewery opened in mid-2018 with its own equipment.
“The biggest challenge is to focus on the business side because we are very passionate about the creative side of beer,” he said.
