Karel Goddeau, brewer/owner of De Cam Geuzestekerij, a lambic blender in Gooik, Belgium, gives us his thoughts on holding the line on tradition. Goddeau took over the De Cam in 2000 from Willem van Herreweghen, who founded it in 1997. Goddeau has a rich heritage to base his stance on tradition as he got advice and training from Armand and Gaston Debelder, among others.
