After a bout of homebrewing and earning his chops at various Belgian breweries he liked, Jef Pirens founded Brouwerij D’Oude Maalderij (D.O.M) in 2011. In 2012 he launched D.O.M’s first beer, de Qantelaar, brewed for him by Brouwerij Gulden Spoor. 

In September 2015 he opened a cafe, ‘Estaminet De Brouwerij’ in Izegem. In the spring of 2016, he launched the brewery’s own 10hl installation in Izegem.

Pirens describes his approach as “traditional style, being Belgium, mixing it up with progressive and creative brewing”.

He says: “I am not looking for getting bigger…I am a small, humble brewer. I like to brew my beer and I like to people enjoying my beer, and that’s about it. I don’t want to be big. I like to be small.”
